Sheer-KhurmaIngredients:

  • Dried dates 6-8
  • Milk around 1 Liter
  • Almonds
  • Coconut powder 2-3 tbsp
  • Small Cardamom 4-6
  • Vermicelli around 1 cup
  • Pistachios(sliced)
  • Cooking oil 4-6 tbsp

Cooking Recipe:

  • First of all, heat milk in a container and let it boil to some extent.
  • When it starts rising, add sugar and cook on medium or low heat about 10-15 minutes
  • Now soak all dried dates and nuts in ½ cup of milk for around 20 minutes.
  • In a pan, heat cooking oil on medium heat and add cardamom.
  • When these cardamoms pop up, add almonds, pistachios and dates in the oil and fry them until golden brown color is appeared.
  • Now add Vermicelli and stir-fry around 3-4 minutes and then add coconut.
  • Now pour this better on the milk and allow it to cook on low heat for 5-7 minutes.

Boti-KababIngredients:

  • Mutton/beef around 1 Kg (boneless)
  • 1 cup yogurt
  • 1 cup oil
  • 4 green chillis (chopped)
  • 4 lemon
  • 2 tbsp Ginger paste
  • 2 tbsp Garlic paste
  • Khaskash Powder around 1 tbsp
  • Red Pepper Powder
  • Salt to taste
  • 1 tbsp Ghee

First of all, you have to wash boneless meat properly. After washing the stuff, you have to use kitchen hammer to strike boneless pieces. Then add all the spices in a bowl and marinate meat properly and refrigerate it for two and half hours. Once your boneless meat is marinated well, take a cooking pan and pour the stuff in the oil. Cook it over low flame. If the meat is soften enough and water is dried, and then put off the flame.  Now, carefully place a piece of aluminum sheet over the meat and place burning coal over it. Pour some oil on the coal and cover up your preparation immediately.  Now remove the lit after 10-15 minutes and you are ready to serve your dish. 3. Kheer:

Here is the most popular and delicious recipe for Kheer, which is flavored with Rose water and Cardamom. You can serve it warm or cold as required. This dessert is mostly served after having meals. Let’s figure out some essential ingredients for preparing thick and mouth watering Kheer.

  • 300g Caster Sugar
  • 1 tbsp finely chopped Almonds
  • Semi-skimmed milk around 1 Liter
  • 75g raw white rice
  • Cardamom around 4 pods
  • Rose water around ½ tea spoon

Cooking Directions:

Place the rice in a deep and big bowl and add significant amount of water in it. Soak them for one hour. Heat milk in a big container on slow flame and drain the rice, once they are soaked well. Add them in the milk and let the mixture cook on low heat. Cover it around 50 minutes and stir the milk occasionally until it mixes well. Add sugar and Cardamom and cook around 20 minutes. Remove the container from heat and add few drops of rose water. Garnish it with almonds and pistachios.

4. Kashmiri Biryani:

You will find variety of recipes online for preparing Biryani. But Kashmiri Biryani is the one, which will let your taste bud indulge in some kind of paradisiacal flavors. Let’s explore some easy-to-find ingredients of this appetizing food.

Kashmiri-BiryaniIngredients:

  • 1 tbsp Ginger and Garlic paste
  • ¼ teaspoon Cardamom powder
  • 2 tbsp Red chilli powder
  • 2g Saffron
  • 150gms Ghee
  • 1 Kg white rice and 200ml milk
  • ¼ teaspoon Kewra Essence
  • 1 tbsp Garam masala powder
  • Salt to taste
  • 2 tbsp Fennel seed powder
  • ¼ teaspoon sugar
  • 1 pinch Asafetida
  • 1 KG Chicken or Mutton

Cooking Recipe:

Fry Asafetida in oil and chicken pieces in Ghee. Add around 2tbsp of curd and stir the mixture until it becomes pink. Pour some water and add salt to taste. Now include Red chilli powder, Bay leaf and Garlic and Ginger paste or powder. Cook the mixture for few minutes and add around ½ liter water. Now include 1 tbsp Fennel seed powder and Garam masala. Mix it well until the meat softens enough. Now remove the chicken pieces and keep them separate in a bowl. Now boil 2 liters of water in a big pan and add 2 tbsp of salt. Drain out Garam masala and Fennel seeds and pour the mixture in the boiling water. Now add rice in the mixture and cook on medium heat until half done. Separate rice from water. At this stage, you have to arrange meat and rice layers in an alternate manner. Add some milk, food color and ghee at the top and cook, covered for around 15 minutes. Your mouth-watering Kashmiri Biryani is ready to serve.

5. Korma:

  • 1 Chicken cut into pieces
  • 3 tbsp Corn oil

  • 5 black peppercorns
  • 3-4 cardamom pods
  • 2 tbsp yogurt
  • 1 teaspoon lemon juice
  • 2 large red onions

Cooking Directions:

Pour some oil in a large and heavy bottomed pan. Heat it well. Sauté nicely sliced onion in the corn oil. Stir it continuously until it becomes crispy and golden brown. Add garlic and ginger paste, Garam masala, chilli powder and cardamom in the oil and stir the mixture nicely. Chop the tomatoes and include in the mixture. Stir well for around 3-4 minutes and then add Chicken pieces and cook it on high flame.  Add more spices as required and coat the chicken with mixture well. Now cover the pan and leave chicken for at least 25-30 minutes. When the meat becomes tender, add yogurt and lemon juice in the mixture. Cook it for another 20 minutes on very low flame.
