Mini Ham and Cheddar Veggie Cups
½ cup finely chopped onion
½ cup finely chopped broccoli
½ cup finely chopped green pepper
2/3 cup chopped ham (about 2 ounces)
1/3 cup (1 ½ ounces) shredded extra sharp Cheddar cheese
2 tablespoons chopped fresh chives
1/8 teaspoon dried thyme
1/8 teaspoon black pepper
3 large eggs
Preheat oven to 350 degrees.
Heat a large nonstick skillet with cooking spray over medium-high heat. Add onion, broccoli and green pepper, and sauté 2 minutes or until crisp-tender. Add ham, and sauté 3 minutes. Remove from heat and cool.
Combine cheese, chives, thyme, pepper and eggs ingredients in a bowl, and stir gently with a whisk. Add ham mixture, stirring with whisk.
Spoon ham mixture into 24 miniature muffin cups coated with cooking spray. Bake at 350 degrees for 20 minutes or until set.
Yield: 8 servings of 3 cups each
